This is such a delightful pastel pink chia pudding. Just looking at it, makes me happy.
Tiny, tiny chia seeds. Dating back centuries to ancient Aztec times. But what an impact they still make today! When mixed with a liquid, they go into full absorption mode, swell up, become almost gel-like and thicken the liquid.
This creamy chia seed pudding, delicately flavoured with vanilla, makes a lovely filling breakfast, banting dessert or lunchbox meal. And best of all… it’s sugar-free! I developed this recipe for low carbers like me who enjoy real food where one can literally taste the goodness of each ingredient.
