Here is my quick version of Middle Eastern Shakshuka (fried egg on a chunky, spicy tomato sauce). It is by nature low carb, dairy-free, gluten-free and sugar-free.
Strawberry and Lemon Jam
I developed this effortless low carb strawberry and lemon jam. My recipe only makes a little more than ⅓ cup of jam, which might sound rather ridiculous. But put it to the test and see how little of this jam you actually need. During the jam-making process, the strawberries are reduced and become very concentrated.

Mini Pots and Pans
Yes, they look like they belong in a doll’s house. So cute, yet so very practical at the same time.
When you’re cooking low carb for one person only, these mini pots and pans are must haves.
They are all non-stick. The pots are 11/12 cm in diameter and the pan is 13/14 cm. Perfect sizes for singles.
Dill, Garlic and Lime Fish
Butter. Dill. Garlic. Lime. Natural partners for fish. These classic flavours won’t overpower the mild taste of hake, but they will certainly enhance it.
Paprika Fish
You can almost taste the coast of Spain in this very, very easy recipe for oven-baked fish. It will bring hot, sunny days, siestas and deep blue oceans right into your kitchen.
Fish like hake does not have much flavour of its own and needs something to lift it. This paprika butter is such a thing. It will give a rather plain fish a lot of character without overpowering it.
If you prefer grilling the fish instead of baking it, do so. Just baste it frequently with the paprika butter. Keep an eye on the fish to prevent it from burning on top while the inside is still raw. If it happens, just move the fish to a lower oven rack and/or turn down the grill to a lower setting.
