Sheer bliss. That is how I describe this low carb treat, served in small espresso cups. Made in a flash, using only 3 ingredients. Cream, fresh passion fruit (granadilla) and sweetener.
Ingredients:
- ¼ cup fresh cream, chilled
- 2 teaspoons granulated Xylitol
- 4 teaspoons fresh passion fruit (granadilla) pulp
- a little extra passion fruit (granadilla) pulp to spoon on top
Method:
- Whip the cream and Xylitol together until firm.
- Add the 4 teaspoons of passion fruit pulp. Whip again.
- Divide between 2 small cups, top with the extra passion fruit pulp and serve.
Makes a little more than ½ cup, enough for 2 small (but filling) servings
