Whipped Passion Fruit Cream

Sheer bliss. That is how I describe this low carb treat, served in small espresso cups. Made in a flash, using only 3 ingredients. Cream, fresh passion fruit (granadilla) and sweetener.

Ingredients:

  • ¼ cup fresh cream, chilled
  • 2 teaspoons granulated Xylitol
  • 4 teaspoons fresh passion fruit (granadilla) pulp
  •  a little extra passion fruit (granadilla) pulp to spoon on top

Method:

  1. Whip the cream and Xylitol together until firm.
  2. Add the 4 teaspoons of passion fruit pulp. Whip again.
  3. Divide between 2 small cups, top with the extra passion fruit pulp and serve.

Makes a little more than ½ cup, enough for 2 small (but filling) servings
