Bacon and Baby Marrow Bowl for One

This little low carb Bowl for One is guaranteed to satisfy your tastebuds as well as your tummy. It tastes really good and will keep you full for long.

You can prepare it in mere minutes. An added bonus is that you will be getting your fibre-rich greens as well as your essential fats and proteins in at the same time.

Ingredients:

  • a small splash of olive oil
  • 2 rashers of streaky bacon, coarsely chopped
  • 3 baby marrows (zucchini/courgettes), coarsely grated
  • freshly chopped chives or sage leaves to taste
  • 1 tablespoon cream cheese (I use a cream cheese with a fat content of 32% or more, usually sold in block form such as Philadelphia cream cheese.)
  • salt and white pepper to taste
  • a tiny pinch of ground nutmeg

Method:

  1. Heat the olive oil in a non-stick frying pan. Fry the bacon till almost done.
  2. Add the baby marrows (zucchini/courgettes) and chives. Stir-fry until just done.
  3. Add the cream cheese and stir through until melted.
  4. Remove from the heat. Season with salt, white pepper and nutmeg.

Serves 1

Tips:

  • Add freshly crushed garlic if you wish.
  • Use sage or thyme instead of chives.
